European AI processing

We are taking the first steps towards European sovereignty. On 12 October we change how we run large language models so inference on notes, pages, and files uses only infrastructure that is entirely European. Our subprocessors list changes to match.
- Model inference moves from Marqo Inc. (Celeris) to Lyceum Technology Germany GmbH and Melious AI GmbH, both on fully European infrastructure.

The AI processing changes are the first steps. By 31 December 2026 we aim for even more sovereignty: Cortee should rely primarily on providers that host and process data exclusively in Europe. That includes every layer we depend on, not only storage and model inference. CDN, DNS, monitoring, and the rest must meet the same bar.
- We will remove or replace providers that have subprocessors outside of Europe.
- We will publish subprocessors and trust updates as we make each change.
